Acorn Raised Iberico Ham with Designation of Origin Jamon de Guijuelo, artisan and traditionally made.
Guijuelo is located in the southeast of the province of Salamanca and it has a perfect climate for the ripening and drying of the Iberico hams and shoulders. It has dry and cold winters and short and smooth summers.
This Acorn Raised Iberico Ham comes from iberian pigs fed with acrons, stubble and grass from the pasture. After the sacrifice, the hams begin a long elaboration process, overseen by the Regulatory Board.
At this point, the artisans stop time to give full attention to the temperature control in order to offer unique hams and shoulders.
The Acorn Raised Iberico Ham Guijuelo is characterized as a piece of elongated, stylized and thin cane with soft grease. It has a ripening process of 24 to 30 months.
It has an external appearance characterized by the shape and color of its fat, the oiliness of the adipose walls and the green, blue or gray-green fungal flora. It is also characterized by its cut in "V", and of course, by its characteristic black hoof.
When cut, it has a many grease veins infiltrations into its lean meat, with colour shades ranging from pale pink to purple red.
Its acorn's fat low melting point is its golden and shiny bacon.
Its meat is creamy and it contains a low level of salt.
