Guijuelo is located in the southeast of the province of Salamanca and it gives its name to this important Spanish designation of origin. This region's climate favours the ripening and drying of the iberico hams and shoulders. The perfect weather that, along with the work of artisans taking care of every single detail, result in top quality products.
This Acorn Raised Iberico Pork Shoulder has a ripening process between 24 and 28 months in pantries and natural dryers.
It is an elongated, stylized and thin cane, with various grease veins infiltrations, smooth and shiny.
When cut, it has a dark-pink/magenta colour.
Its flavor is intense, slightly salty, and it has a deep aroma.

It cuts like butter, and melts in the mouth. Exquisite taste. Arrived promptly, and beautifully presented. If you're not sure whether to go for SERRANO ham or this, free range, black, IBERIAN, acorn fed ham, just try it and see. I recommend Sabordesiempre.com.
