The Black Bull is a typical product of Catalonia, artisan made from a mixture of pork meat and pork fat, salt and pepper, cooked and stuffed into natural pork casings.
Blood gives it that dark-garnet colour, like the darkest wood.
When cooked, some parts remain solid and other parts melt because of the diverse textures inside it. This gives the bull an intense and unique flavor.
It is highly recommended for stews.
