This typical product of Castile-La Mancha is artisan and traditionally made from raw Manchego sheep milk.
It has a ripening process of 2 months in dryer and between 8 and 10 months in olive oil.
It has an ivory-white colour darkened by the contact with the oil, and it may present reddish shades.
Its texture is flexible and firm, pressed, with unequally distributed eyes.
It has an exquisite olive oil flavor, intense and a little bit spicy. It has lingering, very pleasant and intense aftertaste.
It is recommended to keep between 12-18 ºC (53-64 ºF).
