Garrotxa is a typical cheese from Catalonia, artisan made from goat milk.
It is left to ripen in very damp and cool places, and this causes the appearance of its natural mould rind.
Its interior is compact, slightly soft and bright white.
It has a very mild and buttery flavor, slightly acid and melting, with a sligh taste of hazelnuts.
