Barros Little Roll is a typical product of Extremadure, artisan and traditionally made from raw goat milk.
It is a soft cured cheese with aripening process of 15 days.
Its rind is thin and it has white mold (Penicillium candidum).
When tasted, it is melting and creamy.
It has a mild and very personal flavor, a little bit sour with a herbal explosion and an elegant bitter aftertaste produced by the rennet.
Its aroma is strong and intense.
It should be stored between 4 and 6 ºC (39-42 ºF).
