Iberico Pork Shoulder, artisan made from Iberian pigs fattened exclusively on acorns, and later on cereals and legumes to ocmplete theri feeding until the moment of its sacrifice.
Gujuelo is located in the southeast of the province of Salamanca with a climate that favours the ripening and drying of the iberico hams and shoulders. The perfect weather that, along with the work of artisans taking care of every single detail, result in top quality products.
This typical product of Salamanca, with a low salt content, has a ripening process between 20 and 24 months in pantries and natural dryers.
It is an elongated, stylized and thin cane, with various grease veins infiltrations, smooth and shiny.
When cut, it has a dark-pink/magenta colour.
This Acorn Raised Iberico Pig Shoulder has an intense, slightly salty flavor and an extraordinary aroma.
