Its ripening process takes place under controlled conditions of temperature and humidity. During ripening process, the seasonings acquire its full flavor.
When cut, it is homogeneous, smooth and well integrated, with no abnormal coloring.
Its colour is garnet, with rough skin and thick white natural flora.
It has an intense flavor, fragrant and persistent in the mouth.
