This cheese, with Designation of Origin Idiazabal, has a flavor and aroma characteristic of the mountain pastures eaten by the released Latxa sheeps and the natural rennet obtained from the lambs.
It is a perfect partner for a good red wine, for sweet and savory foods, and specially fruits of the earth, such as mushrooms and fungi in jam.
