Vellon de Fuentesauco Aged Cheese is artisan and traditionally made from Castilian and Merino sheep raw milk.
It has a ripening process of at least 12 months
Its natural rind has a brown colour, and it is bathed in olive oil during the ripening process.
It has a firm and compact texture, yellowish colour, with small eyes.
Its aromas and flavors are genuine and characteristic of the sheep raw milk, persistent and very intense.
Smell and taste characteristics that remind of floral and fruity aromas can be appreciated.
