Trevelez Ham is an author ham with hundreds of years of ham tradition.
Each one is under strict control by the Control Board and by the master craftsmen.
During the ripening period, nitrifying salts are not used, only is sea salt is used in a very low proportion.
It has a minimum aging of 17 months.
This Serrano Ham has meat with a maximum proportion of very tasty intramuscular fat.
It offers an intense aroma and a delicate flavor because of its low salt content and its maturation in the mountain air.
