Acorn Raised Iberico Ham Gourmet Gold is a product from Guijuelo.
Guijuelo is located in the southeast of the province of Salamanca and it has a perfect climate for the ripening and drying of the Iberico hams and shoulders. The dry and cold winters and its short and smooth summers promote the drying and maturation process, obtaining the highest quality products.
This Acorn Raised Iberico Ham comes from iberian pigs fed with acrons, stubble and grass from the pasture.
It is an Iberico Ham cured for between 28 and 36 months, which has been selected to give the name of "Gourmet Gold" for its concentration of oleic acids accumulated into its meat. Oleic acid is a type of fat provided by the acorn which gives the ham its characteristic flavor.
It is characterized as a piece of elongated and stylized, thin cane.
It has an appearance characterized by the shape and color of its fat, the oiliness of the adipose walls and the green, blue or gray-green fungal flora. It is also characterized by its cut in "V", and of course, by its characteristic black hoof.
When cut, it has a dark pink-magenta colour with diverse grease veins infiltrations, soft and shiny.
Its flavor is intense, sweet, not so salty, delicate and unique. It offers an extraordinary aroma.
Its meat is creamy and it contains a low level of salt.
