Acorn Raised Iberico Shoulder DO Dehesa de Extremadura with Designation of Origin Dehesa de Extremadura, made from the front legs of Iberian pigs, which are exercised more actively during the grazing period at the Dehesas. That's why ist flesh has a stronger flavour and texture.
This Iberico Shoulder is made from 100% pure iberian pigs which are raised in the montanera (mountain pastureland) and fattened on acorns and natural pastures from the "Dehesa" ecosystem of Extremdura, which forms part of the extraordinary landscape of the Sierra de Montánchez.
Extremadura has approximately one million hectares of the best preserved Dehesas in Europe, where Iberian pigs lead a very quiet life. The Regulatory Council of this important Spanish Designation of Origin supervises each production step of the Spanish hams and shoulders in order to guarantee high quality products.
This Acorn Raused Iberico Shoulder is cured during a period of 28 up to 36 months.
The delicate, shiny flesh has a pinkish/purple red color when cut.
It offers a delicate, sweet flavour with a low salt content.
Its taste is very pleasant and full of nuances.
Soft texture and a shiny and aromatic fat layer.
