Artequeso Cured Cheese has the Designation of Origin Queso Manchego.

It has a ripening process of between 6 and 8 months.

This typical product of Castilla La Mancha is artisan and traditionally made from raw Manchego sheep milk of the best quality.

Its rind is marked with pleita (an esparto strip) in its cylindrical part, and with "flor" in the plain faces. It has a brown anti mould layer.

It has an ivory-white colour and it is firm, pressed and with eyes unequally distributed.

It has an elastic texture, easy to cut.

Its flavor is lactic and savory, with spicy nuances ans an intense aftertaste, lingering and very pleasant.

It is recommended to keep it to 3-6 ºC (37-42 ºF)
