The olive comes from the region of Sierra Magina, located in the northeast of the province of Jaen and declared Natural Reserve. The olive groves that make up this area are plants with good vigor and large follicle development. Since in some cases the altitude surpassed for the olive trees is more than 3,000 feet, it can be considered mostly mountain range, all of which are privileged by the microclimate in this area.
This oil is characterized by its clean, fragrant flavor, with harmony between a lightly bitter touch and spicy progressive one.
