Monte Enebro is a soft cheese with natural mouldy rind made with pasteurized goat milk.

It is noted for its creaminess and its pure flavor of goat milk with a touch of acidity.

It has a pure white colour in contrast with its natural mouldy rind with blue hints, caused by the Penicilum roqueforti.

Its format, known as "mule foot", is tabular, elongated and cylindrical.

It is a cheese known both nationally and internationally.
