Iberico Recebo Ham, a typical product of Salamanca, is artisan and traditionally made. It has the Designation or Origin Jamon de Guijuelo.
Guijuelo is located in the southeast of the province of Salamanca and it gives its name to this important Spanish designation of origin.
Guijuelo's climate characteristics, with dry and cold winters and short and smooth summers, favour the ripening and drying of the hams and shoulders.
This Iberico Ham comes from iberian pigs fed exclusively with acrons, and later they complement their feeding with cereals and legumes since the moment of the sacrifice.
It is an Iberico Ham characterized by its low salt content and its ripening process of 20 to 26 months.
It is a piece of elongated, stylized and thin cane with grease veins.
It offers a vivid color.
When tasted, it has a fine texture and a mild and slightly salty flavor.
Its aroma is deep, intense and slightly sweet.
