This hard cheese is made from sheep milk.
It stays for 3 months in a dryer and then it is packaged and it rests in the cellars until its marketing.
Its flavor is intense, with vegetable and floral nuances. It is very balanced and structured, with great persistence in the mouth.
It has a deep aroma of clean sheep milk.
The color of the paste is ivory and waxy yellow. Its texture is compact with unequally distributed eyes and a buttery sensation.
The ideal serving temperature is 20-24 ºC (68-75 ºF)
