The Sumaia, a typical product of Catalonia, is artisan made from a mixture of minced pork meat stuffed into natural pork casing.
It is narrower than the salami and it is ripened under conditions of controlled temperature and humidity (drying of raw Catalan sausage).
Once the ripening process is completed, the sumaia takes a more tender consistency than other sausages of its kind.
Its touch is compact and its form is flattened, more or less regular.
When cut, it is homogeneous, smooth and well integrated, with no abnormal coloring.
Its color is bright-red and incipient natural flora.
It has a soft and almost sweet flavor, typical of the young sausages. It is a very tender sausage that melts in your mouth.
